Trained as an oenologist at West Attica University in Athens, I completed my studies with a PhD in oenology at the Institut des Sciences de la Vigne et du Vin - ISVV (Bordeaux University, Oenology Research Unit). My thesis focused on the study of fruity aromatic expression typical of Bordeaux red wines via perceptual interactions. Awarded the prize for the best thesis defended in 2012 on aromas (GIRACT), my results enabled me to pursue my research on this theme through two post-docs. I joined Bordeaux Sciences Agro at the start of the 2017 academic year as Senior Lecturer in Oenology, and am now Director of an international course, the Master of Science Vineyard and Winery Management, at Bordeaux Sciences Agro. My research activity is carried out within the Oenology Research Unit, in the “Determinants of Sensory Properties” axis of the ISVV. The aim of my research is to study the aromatic expression of red wines from a chemical and sensory point of view.
Field of research
The research work I’m supervising is carried out within the Oenology Research Unit, in the ISVV’s “Determinants of Sensory Properties” axis, and focuses mainly on the chemical and sensory mechanisms linked to the aromatic expression of wines, and more specifically to the fruity aroma of red wines.
Key words
Red wine, perceptual interactions, sensory analysis, fruity aroma, wine composition.
